Extra Virgin Olive Oil is an easy and efficient way to get the additional nutritional benefits of the Mediterranean Diet while cutting back on the extra calories and fats of butter, plain cooking oils, and other animal fats used for cooking.  Here are five trends with extra virgin olive oil, more commonly known now as “EVOO” after Rachel Ray coined the term, that will help you get the additional health benefits and delicious flavors of olive oil without the additional calories or unwanted fats.  

    1:  Making Herb Bombs

Herb bombs add an explosion of flavor and nutrients to your cooking with the flair of a restaurant chef!  They’re also a great way to use those fresh herbs that may be going to waste AND  they only take 10 minutes to make!  Plus, they can help you save time by not having to purchase and chop fresh herbs at the grocery store each week. 


  1. Roughly chop up your favorite herbs and place the herbs in each of the spaces of an empty ice cube tray
  2. Fill each space halfway of the herb-filled ice cube trays with extra virgin olive oil before placing in your freezer

For easy salad dressings or as an ingredient in dressings, let the bombs thaw and come to room temperature.  To accent your cooking recipes, simply add the frozen herb bomb into your hot skillet instead of plain cooking oil.  

Some of our favorite herb bombs to make are: rosemary, sage, thyme, oregano, minced garlic, lemon zest and even ginger.

    3. Adding a Spoonful of EVOO to Everyday Foods

The health benefits of extra virgin olive oil are well known and can be easily accessed when you add a spoonful of extra virgin olive oil to the foods and drinks you’re already consuming every day!  If you regularly drink a smoothie, simply add a spoonful of EVOO for additional support to your cardiovascular system, joint health, and immune system.  If you like oatmeal in the morning or are making soup for your next meal, adding a spoonful of EVOO can enhance the flavor and deliver more of the benefits of olive polyphenols like hydroxytyrosol.  The easiest way to do this is getting on the growing trend of consuming a spoonful of extra virgin olive oil directly every day!  


    4. Making Your Own EVOO Ice Cream

Think it is too difficult to make your own healthy and flavorful ice cream at home?  You’d be surprised how the EVOO Ice Cream trend is changing minds with this easy recipe! You will, of course, need an ice cream maker to make this recipe!  If you don’t have an ice cream maker or want to skip right to the part of eating ice cream, just drizzle an EVOO over your favorite ice cream, with a sprinkle of sea salt, and enjoy!


  • ¾ cups of whole milk
  • ¼ cup of heavy cream
  • ¼ teaspoon of kosher salt
  • ½ cup plus 2 Tbsp. of sugar
  • 4 large egg yolks
  • ¼ cup of extra virgin olive oil


  1. Bring milk, cream, salt and ½ cup of sugar to a simmer in a medium saucepan, stirring to dissolve the sugar, then remove from heat
  2. Whisk egg yolks and 2 Tbsp. sugar in a medium bowl until pale, then whish yolk mixture into remaining milk mixture in the saucepan
  3. Cook over medium heat, stirring constantly, for 2-3 minutes or until thick
  4. Strain the mixture through a fine-mesh sieve into a medium bowl, set in a larger bowl of ice water, then whisk in the extra virgin olive oil
  5. Let cool, stirring occasionally
  6. Process the mixture in an ice cream maker, according to the manufacturer’s instructions, then transfer to an airtight container and freeze until firm, at least four hours

This recipe makes 3-4 servings and can last up to a week!  Try not to eat it all in one sitting! 

If you’re looking to change up the taste of the recipe, experiment with different extra virgin olive oils!  Some are light-bodied, fruitier olive oils while others can result in a silkier, more peppery taste.

    5. Taking Olive Oil Supplements

What could possibly be trendier than getting the health benefits of the Mediterranean diet and extra virgin olive oil in a capsule?  There are now several supplements that utilize olive oil, olive fruit, and olive leaf to deliver the anti-inflammatory benefits of olive polyphenols including hydroxytyrosol, tyrosol, oleuropein, and oleocanthal!  Each product has their own ingredients and means of measuring their enriched polyphenol levels.
